Lilly's Oatmeal Cookies





The quest to create a delicious, healthy substitute for Clif Bars and Noe Valley Bakery treats has come to an end! It's always a problem for us: what to eat when you need something quick, easy and filling? Too many times we settle for something that isn't that good for us, of course. Lilly's Oatmeal Cookie recipe seems to do the trick, so we'd like to share it with you! They're low in sugar, delicious and nutritious. In a bowl, mix 1/8 cup brown sugar, 6 T butter, 1 1/4 cup oats, 1/3 cup fat free milk, 1 egg, 1/2 cup wheat flour, 1/2 cup almond meal, 2 T flax meal, 1/4 t salt, 1/2 t baking soda, 2 t pumpkin pie spice, 2 t vanilla, 1/2 cup raisins, 1/2 cup chopped walnuts, 1/4 cup chocolate chips (optional). Bake these babies at 350 degrees for about 10-15 minutes and enjoy!
